about the brewtech program

San Diego is defined as the craft capital of the United States with over 150 active brewhouses and numerous more in planning to open. MiraCosta’s 280-hour BrewTech program is geared to train students to be production brewers and exhibit confidence in the brewhouse, cellar, or packaging line. The only craft program in San Diego with a brewery on site students will get the hands-on experience the industry requires taking it from grain to glass. From recipe development, wort production, cellar practices and packaging we offer a well-rounded curriculum to become a turnkey brewery technician. Classroom material covers the chemistry and biology of beer production, an introduction to all the equipment found in breweries of all scales, and workplace skills. Industry tours around San Diego also introduce the students to multiple brewing applications to further tie their knowledge together.

Tuition $4000
GI Bill ® and WIOA funding approved. For all other candidates, tuition is FREE through the DOL funded America’s Promise Grant. NOTE: A $350 charge to cover administrative costs will be collected upon registration.

Course Length
Complete this program in just 15 weeks.  Offered twice per year.

Hours of Instruction
Tuesday-Thursday, 4:00pm-10:00pm & Saturdays, 8:00am-2:30pm. Please see the events calendar for dates.

HS Diploma or GED, basic math and reading comprehension assessments, interview, and complete submission of enrollment documents.

  • The Brewing Process, including grain handling, wort production, malting, and malt analysis
  • Brewing hydraulics, basic Electronics and equipment repair
  • Filtering, fining, dry-hopping, carbonation, CIP, and tank readings
  • Yeast and fermentation processes and their effects on beer quality
  • Theory and practice of refrigeration and heat in the brewery
  • Brewhouse quality control
  • Recipes for production and sourcing all raw materials
  • SOP documentation and maintaining consistency in procedures
  • Finishing beer, sterilization of beer and packaging technology
  • Career Exploration and Readiness

after course completion

If students attend all classes, complete the necessary coursework, and pass the required tests, students will receive: A National Career Readiness Certificate, and a MiraCosta College Certificate of Accomplishment.

Career Paths

There are ever increasing openings for BrewTechs in San Diego County! Companies such as: Stone Brewing, Firestone Walker Brewing Company, Coronado Brewing Company, and Mikkeller Brewing   have positions open.

Mike Stevenson
BrewTech Instructor

Mike Stevenson has been homebrewing since he was a young adult and brewed independently about 3 times a month in college.  He has had opportunities to travel around the world to learn from master brewers including, McMuellers Brauereigasthof, Linnich-Kofferen in Germany and breweries in Belgium, Netherlands, the United Kingdom, and Sardinia, Italy.  Mike has been teaching at UCSD Extension in their Brewing Certificate program for the past year. Mr. Stevenson is now the Head Brewer and Co-Owner of the popular Culver Beer Company in Carlsbad, California.

Justin Stambaugh
BrewTech Instructor

Justin Stambaugh has been working in the beer industry for nearly 8 years and had been an avid self-taught home brewer prior to entering the industry. He left the restaurant world in 2012 to start an internship at the award winning Rip Current Brewing Company under Brewmasters Paul Sangster and Guy Shobe. There he worked his was up through all brewhouse positions until he became the Head of Brewing Operations for them. While working as the Head of Brewing Operations, Rip Current earned many accolades including multiple Great American Beer Festival Awards, World Beer Cup Awards, and the 2015 Very Small Brewing Company of the Year.  He recently parted ways with Rip Current Brewing to start his own venture, Stave & Nail Brewing Company, a niche brand that specializes in Barrel-aged Sour Beer as well as lagers, stouts and IPAs.
